Mirabelle is a small yellow plum, round and speckled with red. Fruit full of sugar, it has a delicate aroma. The fruits used for distillation are harvested at peak ripeness in late August to early September. The harvest is done mechanically by shaking the tree. Its preferred regions are Lorraine, Alsace, and Franche-Comté.
Once the fermentation starts, it is stirred daily to prevent the formation of a “cap” on the surface, which could encourage bacteria growth. After fermentation, the fruits are distilled and the eau-de-vie will be resting in the cellar before bottling.
